UNFINISHED BUSINESS
V93-44, Presentation to Board by Steven Stack for an alternative
solution to installing a 500 gallon grease trap on property
located at 5ueu w. Broadway (westside Plaza), Pearland.
Mr. Steven Stack, 2423 Laurel Lane, Peailand, presented a diagram
of his proposal tor a grease interceptor. He stated the grease
interceptor has a 700 gallun capacity which means the flow rate
is 35 gallons per minute with a grease hold_iiig capacity of "/U
pounds_ The interceptor can be mounted flush with the floor
below ground or it uan be mounted above ground. The floor drain
at the end would have a lint strainer on it which would go into
the 3" sewer drain line_ 'There would be at three compartment sink
which wuuld be elevated on 20" legs and the drain pipes would
feed into the YOU gallon grease interceptor with the 3" line and
then empty into the 3" sewer line. The mop sink and the hand
1
sink would have their own lines as well, and they would be tied
to a lint hair trap for the clean out and then tied to the 3"
sewer drain also. The grease trap has a clean out place and the
top is removable. He also stated that he has been talking to a
plumber and the plumber feels that mounting the interceptor tlush
with the ground or below the ground with the top flush to the
cement would be better, so there would be access without sticking
up in someone's way. As far as clean out, there is a pizza
place next door which has a grease trap which has to be cleaned
out regularly and while his is being wut, t tiz4w O.0 31d be
done at the same time.
City Health Officer John Hobson stated easy clean out would
depend on whether or not the grease trap could be reached with
hoses_ He also asked Chiet Building Utticial lion uuynes how he
felt about this type of interceptor since Mr. Guyiies is over the
Permit Dept.
Mr. uuynes said he wasn't familiar with this type ut Luterceptor
in lieu of a grease trap.
Mr. Stack stated that this type of grease trap would be
considered rather than a below ground 5uu ground capacity. He
turther stated that nothing else would be served except yogurt
and ice cream which is written in his lease.
Presiding Chairman Gary Shiver asked Mr- Stack how he expects to
clean the trap because the hoses from the companies who clean out
grease traps are not clean and he probably wouldn't want them
brought in the tront door.
Mr. Stack stated there is a back door that is accessible, but it
would ytobably be easier to come in the tront door.
Mr_ Shiver stated that he doesn't have a problem with the
interceptor, but he does have a problem with what to do with the
material after the clean out.

Mr_ Bayne stated that the interceptors are cleaned out every
three months in the Subway shops; however, they generate more
grease than a yogurt and ice cream shop_
Board Member Rodney Pampell inquired whether or not the grease
interceptor does the saute thing as the grease trap or are thee. -e
limitations as compared to a grease trap.
hoard Member Mike Besser stated the only limitation is theamount
of grease and clean out isn't easy.
Discussion followed regarding change of ownership/occupancy and
how it would attect the permit, whether or not the grease
interceptor is eLlual to the external grease trap, tlow rate, and
removal of floor drain if it doesn't go through a trap.
Presiding Cham -Tuan Gctry Shier made the motion, seconded by City
Health officer uohn Hobson, to permit the variance if Mr. Stack
provides the necessary flow rate of 6u or more gallons per
minute. Mr. Hobson abstained trom voting, however, it was his
recommendation that this variance be denied.
Motion failed 3 to 2 with John Hobson abstaining_
